Cheese Toasts with Onion Marmalade

2 spoons Oil, olive

3 pieces Onion, raw

2 twigs Thyme, fresh

2 spoons Vinegar, red wine

2 spoons Honey

1 pinch Spices, pepper, black

2 pinch Salt, table

360 g Bread, wheat

500 g Cheese, edamame
Steps

Peel the onion, wash it, halve it, and slice it. Wash the thyme and shake it dry.

Place a pan with oil on the stove and wait for it to heat up. Add the onion to the pan, mix well, cover, reduce the heat, and simmer for 30 minutes or until the onion becomes soft and translucent. Stir the onion several times during cooking.

Uncover the pan, add the thyme and vinegar, increase the heat, and wait for the mixture to boil. Then cook uncovered over moderate heat for another 20 minutes or until most of the liquid has evaporated. Remove the pan from the heat, discard the thyme, and mix in the honey and onion. Season with a little ground black pepper and salt.

Preheat the oven to 200°C. Grease a low baking dish. Cut the bread diagonally into 1 cm thick slices. Top the bread slices with cheese slices and arrange them in the baking dish. Bake the toasts in the preheated oven for 10 minutes, then arrange them on a plate and add a teaspoon of onion marmalade to each toast. Serve.
