Ingredients
Cookie base

200 g Breadcrumbs, dried

2 spoons Sugar, white

60 g Butter, unsalted

500 g Cheese, creamy

Steps

Preheat the oven to 165 degrees Celsius. Melt the butter in a small pot. Remove the pot from the heat and let the butter cool slightly. In a food processor, grind the biscuits and sugar. Transfer the ground biscuits to a bowl and thoroughly mix them with the melted butter.

Lightly grease a deep square baking dish (23 x 23 cm) with butter and line it with baking paper. Pour the biscuit mixture into the dish and spread it evenly. Press it firmly onto the bottom using your palm or the back of a spoon. Place the dish in the preheated oven for 12 minutes to slightly bake the biscuit base. Then remove the dish from the oven and let the biscuit base cool.

In a bowl, use an electric mixer to smoothly blend the cream cheese, lemon juice, lemon zest, and sugar. Increase the speed slightly and gradually mix in the eggs, one at a time. Once you have a smooth cream, pour it over the cooled biscuit base. Use a spoon to spread it evenly and smooth the top. Sprinkle the fruit over the cream. Place the dish back in the preheated oven for 35 minutes.

When the cream is nicely baked on top and slightly jiggles in the center when you shake the dish, remove it from the oven. Let the baked goods cool to room temperature, then place the dish in the refrigerator for 3 hours to allow the cream to fully set and cool.

Cut the baked goods into small squares, serve them on a plate or platter, and enjoy.
