Cheesecake with Plums

Remember to start preparing it in advance, even the day before your guests arrive, as the cake needs to cool properly.

200 g Breadcrumbs, dried

Preheat the oven to 175 degrees Celsius. Place all the ingredients for the biscuit base into a food processor and blend them. In just a few seconds, they will combine into a ball. Use the mixture to line a springform pan with a diameter of 24 cm. Use a little more than half to cover the bottom, and the rest to line the sides of the pan up to a height of three centimeters.

Place all the ingredients for the cream in a large bowl and mix them with a whisk or hand mixer until well combined. There should be no lumps in the mixture. Then pour the cream into the prepared pan.

Bake the cheesecake in the preheated oven for one hour, then leave it in the turned-off oven for another hour. Remove the pan from the oven and let the cake cool to room temperature, then refrigerate it for several hours (preferably overnight).

Halve the plums and remove the pits. Cut each half into three pieces. Place them in a saucepan with the juice of one orange, honey, and cinnamon. Cook them over moderate heat for 10 minutes, then remove the saucepan from the heat and let the fruit cool.

Arrange the plum pieces on top of the cheesecake. You can arrange them randomly or in a circle, as shown in the photo. The latter will look more beautiful, but it will make the cake harder to slice. Serve the prepared cake.
