Preheat the oven to 205 degrees Celsius. Line a baking tray with parchment paper.

Finely grate the cheese and cut the butter into small cubes.

In a bowl, combine the flour, cheese, and salt, and mix well. Add the butter and crumble it into the flour and cheese mixture. Add the egg white and quickly knead the dough.

Knead the dough and roll it out to half a centimeter thick. Cut into strips, about one centimeter wide, and roll each one up.

Transfer to the baking tray and bake for 10 minutes. Let the sticks cool before serving.
