Cheesy Ham Soufflé

80 g Wheat flour, white, multi-purpose

300 ml Milk, whole milk

200 g Ham, pressed

100 g Cheese, Cheddar

Melt the butter in a saucepan and sauté the finely chopped onion in it. Add the flour and quickly fry it together with the onion until fragrant. While continuously stirring, slowly pour in the milk and bring the mixture to a boil. Cook the sauce over moderate heat, stirring, until it thickens. Remove the saucepan from the heat and let the sauce cool to lukewarm.

Preheat the oven to 180 degrees Celsius. First, mix the egg yolks into the cooled sauce, then add the diced ham and 70 g of finely grated cheddar cheese. Season to taste with salt and freshly ground pepper. Beat the egg whites into stiff peaks and gently fold them into the cheese mixture using a hand whisk.

Generously grease a deep soufflé dish with butter and dust it with grated Parmesan. Pour the prepared mixture into the dish and spread it evenly over the entire surface. Sprinkle the remaining cheddar cheese on top.

Bake the soufflé in the preheated oven for about 30 minutes. It is done when it has risen, and the top is beautifully golden brown and baked.

Serve the baked soufflé immediately at the table. A bowl of salad pairs well with it.
