Ingredients

4 kg cherries, fresh

3 l Water

800 g Sugar, white

2 piece Spices, cinnamon, ground

1 teaspoon Spices, cloves, ground

3 pieces Lemon zest, fresh
Steps

For the preparation of the compote, we will use only ripe and undamaged cherries, so first, carefully inspect and sort them. Then remove the stems, rinse them under running water, and drain.

Place a pot of water on the stove. Add sugar, spices, and lemon zest, and bring the mixture to a boil. Then add the cherries to the boiling liquid and cover the pot. As soon as the mixture boils again, remove the pot from the heat.

Prepare clean jars and fill them to the top with cherries and the hot liquid. Seal the jars tightly one by one and immediately wrap them in a blanket. Let them cool slowly overnight.

Store the compote in a dry, cool, and dark place.
