Cherry Dumplings
For the preparation of cherry dumplings, you can use fresh, frozen, or preserved cherries. We, of course, swear by fresh ones!

250 g cherries, fresh

2 spoons Sugar, white

80 g Butter, unsalted

60 g Breadcrumbs, dried

250 g Cheese, cottage cheese

140 g Wheat flour, white, multi-purpose

2 pinch Salt, table

2 piece Egg, egg yolk, fresh

40 g Butter, unsalted

2 spoons Sugar, white
Steps

Drain the cottage cheese, place it in a bowl, and mash it well with a fork. Sift the flour over the cottage cheese, add salt and sugar, and mix everything well. Melt the butter in a small cup, let it cool slightly, and pour it into the bowl. Add the egg yolk and mix everything well or knead until you get a soft dough. Shape the dough into a ball, wrap it in plastic wrap, and place it in the refrigerator for 30 minutes.

Wash the cherries and remove the pits. Take the dough out of the refrigerator and roll it out on a lightly floured surface to about 0.5 cm thickness. Use a cutter (or a glass) to cut out circles from the dough. Place three pitted cherries on each circle and sprinkle them with a little sugar. Cover the cherries with dough and shape them into dumplings with your hands. Repeat the process until all the ingredients are used up.

Pour about 3 liters of water into a large pot, add salt, and bring it to a boil. Carefully add the dumplings to the boiling water and cook them over moderate heat for about 10 minutes. Remove the cooked dumplings with a slotted spoon and place them in a serving bowl.

Place a pan with butter on the heat and slowly melt it. Then add breadcrumbs to the melted butter and fry them until golden brown, stirring constantly (about 2 minutes). Serve the breadcrumbs as a side or sprinkle them over the dumplings before serving.
