Cherry Marmalade with Cinnamon

Ingredients

1 kg cherries, fresh

1 piece Spices, cinnamon, ground

500 g Sugar, white

Finely chop about 1/3 of the pitted cherries and place them in a thick-bottomed pot along with the remaining pitted cherries. Add lemon juice, water, a halved cinnamon stick, and a strip of lemon zest to the pot. Bring the mixture to a gentle boil over moderate heat, then reduce the temperature and simmer the cherries for 20 minutes or until they soften.

Add sugar and stir until it completely dissolves. Then increase the heat and boil the marmalade for 4 to 5 minutes to thicken. To check the consistency, place a small amount of marmalade on a cooled plate, wait a moment, and then push it with your finger. If it wrinkles, it’s ready. If not, cook for a few more minutes.

Pour the hot marmalade into hot jars, filling them to just below the rim. Seal the jars tightly and turn them upside down. Wait 10 minutes, then turn the jars upright, cover them with a thick blanket, and let the marmalade cool slowly.
