Cherry Pie from a Baking Pan
The dough is very light and crumbly, as it contains butter, egg yolks, and a few tablespoons of sour cream. Combined with the juicy fruit filling, we get a very tasty pie that you can prepare for a picnic or garden party, or simply enjoy as a sweet treat when you need to use up cherries.

400 g Flour, Wheat, bread flour

0.5 bags Baking powder

1 kg cherries, fresh

Steps

Sift the flour and baking powder into a bowl. Add salt and mix the ingredients well. Add the cubed butter and work it into the flour with your fingertips, lifting the mixture to make it airy and crumbly. Add sugar and egg yolks. Once the ingredients are combined, add the sour cream and quickly knead the mixture with cold hands to form a uniform dough.

Divide the dough into two parts, with one piece slightly larger than the other. Wrap both pieces in transparent plastic wrap. Place the larger piece in the refrigerator for 30 minutes and the smaller one in the freezer.

Grease a smaller rectangular baking pan (approximately 30 x 40 cm) with butter and dust it with flour or line it with baking paper. Preheat the oven to 180 degrees Celsius. Pit the cherries and place them in a bowl, mixing them with sugar, ground cinnamon, and breadcrumbs.

Take the dough out of the refrigerator and roll it out on a lightly floured surface into a rectangle slightly larger than the base of the baking pan. Carefully transfer the dough to the pan and gently press it into the bottom and sides of the pan. Ideally, the dough should reach about halfway up the sides of the pan. Spread the cherries evenly over the dough. Grate the frozen dough over the top.

Bake the pie in the preheated oven for 40-45 minutes. It is done when the dough turns a beautiful golden brown color.

The cherry pie is most delicious when still warm. Before serving, dust it with powdered sugar and cut it into slices.

Advice
Instead of cherries, you can use sour cherries, and you can also add a bit of grated lemon zest to the dough if desired.
