Crunchy Topping: Preheat the oven to 180 degrees Celsius. In a bowl, mix all the ingredients except the butter. Cut the butter into cubes and quickly rub it into the dry ingredients with your fingers to form a crumbly dough. Sprinkle the crumbs onto a baking sheet lined with parchment paper and bake in the preheated oven for 10 minutes, or until nicely browned. Let the baked crumbs cool.

Cherry Pudding: Add cherry compote and sugar to a saucepan. Heat it up, while mixing cornstarch smoothly with a little cherry juice. Stir the mixture into the compote, then cook the pudding for a few minutes until it thickens. Let the cherry pudding cool slightly, then distribute it into small glasses. Allow it to cool completely.

Vanilla Cream: In a bowl, mix the egg yolks, regular sugar, and vanilla sugar. Heat the milk until it boils and slowly pour it in a thin stream into the egg mixture. Pour the mixture back into the saucepan and stir in the smooth mixture made from vanilla pudding, cornstarch, and a few tablespoons of water. Cook the cream while continuously stirring for 3 minutes until it thickens. Once cooked, pour it into a container, cover with plastic wrap touching the surface, and let it cool.

Once cooled, mix the cream well with a mixer. Fill it into a piping bag and pipe it over the cooled cherry pudding. Sprinkle the topping over it, decorate the dessert as desired, and serve.
