Cherry Roll
When we have an abundance of cherries, we can prepare them in 101 ways, and there will still be something we havent tried yet. Why not make a slightly different roll?

Ingredients

1.5 kg cherries, fresh

150 g Sugar, white

100 g Butter, unsalted

60 g Breadcrumbs, dried

1.5 dl Sour cream

1 piece Egg, fresh

1 spoon Lemon zest, fresh

0.5 teaspoons Spices, cinnamon, ground

250 g Wheat flour, white, multi-purpose

1 spoon Oil, plant, sunflower

1 dl Water, bottled

1 pinch Salt, table
Steps

Prepare the puff pastry from the ingredients, shape it into a ball, brush it with oil, and let it rest at room temperature for 30 minutes. Meanwhile, thoroughly wash the cherries and remove the pits and stems.

In a bowl, mix the egg and sour cream together until smooth. In another bowl, mix the cinnamon and grated lemon zest. Roll out the rested dough on a floured board. Then transfer it to a floured cloth and stretch it thinly on all sides. Carefully trim the thick edges of the dough with a knife.

Melt 50 g of butter in a pan and lightly toast the breadcrumbs until golden brown. Then set them aside. Evenly spread the toasted breadcrumbs over the stretched dough. Place the cherries on the lower half of the dough and sprinkle them evenly with sugar. Sprinkle the mixture of lemon zest and cinnamon over the sugar. Finally, pour the mixture of sour cream and egg over everything.

Preheat the oven to 180 °C. Grease a baking dish with 20 g of butter. Carefully start rolling the dough from the side with the filling, using the cloth to help. Gently transfer the roll to the greased baking dish. Quickly heat the remaining butter in a small pot. For a nicer shine, brush the top of the roll with 2/3 of the butter.

Place the baking dish in the preheated oven and bake the roll for 20 to 30 minutes. Then brush the roll with the remaining butter and bake for another 7 minutes. Take the golden brown roll out of the oven and let it cool.

Place the cooled roll on a serving platter. You can sprinkle powdered sugar on top, cut it into smaller pieces, and serve.

Advice
Instead of regular sugar, you can use brown sugar. You can also completely avoid adding sugar. Instead of fresh cherries, you can use preserved cherries or sour cherries. To make the job easier, you can prepare the roll using store-bought puff pastry.
