Chestnut Cream Soup with Bacon
A wonderful autumn soup, prepared from soup vegetables, chestnuts, and bacon, will leave a lasting impression on you. With its delightful flavor and velvety texture, of course. Since it is very filling, we recommend serving it in small portions, as you probably dont want to completely fill your guests with just the appetizer.

Ingredients

4 slice Meat, pork, smoked bacon

1 spoon Butter, unsalted

1 piece Carrot, fresh

1 piece Green, raw

1 piece Leek

2 piece Shallot

1.2 l Soup base, chicken, cube

420 g Nuts, chestnut, cooked

100 ml Sour cream

Steps

Cut the bacon into thin strips or cubes. Clean and wash the vegetables. Cut the carrots and celery into pieces, halve the leek lengthwise and slice it. Roughly chop the shallot.

Place a pan on the stove and add the bacon. Cook it slowly over moderate heat, stirring occasionally. When it becomes crispy, remove it from the pan and place it on a plate lined with paper towels.

Pour out the excess fat from the pan, leaving only about one tablespoon. Add butter and wait for it to melt, then add the chopped vegetables to the pan. Season with salt and pepper and cook over moderate heat for 8 to 10 minutes until softened and lightly browned.

Transfer the contents of the pan to a pot, add the chestnuts and soup stock. Bring to a boil, then reduce the heat, partially cover the pot, and simmer the ingredients for 30 minutes or until they are tender.

Remove the pot from the heat and blend the contents smoothly with an immersion blender. Stir in the cream and add a bit more soup stock if needed, but be careful not to add too much, as the soup should be thick. Season with pepper and salt to taste.

Serve the prepared soup in deep bowls (soup cups). Garnish with cream, crispy bacon bits, and bread cubes. Serve the dish immediately.
