Chestnut Mousse with Orange Juice

Ingredients

300 g Nuts, chestnut, cooked

500 ml Sweet cream

30 ml Alcohol, Rum

80 g Powdered sugar

6 g Gelatin powder, unsweetened

200 ml Juice, orange

50 g Nuts, hazelnuts

Steps

Set aside a few cooked chestnuts for decoration, and place the rest in a large bowl. Add one-fifth of the cream, rum, and sugar, then mix everything well with a hand mixer until you get a smooth chestnut cream.

Soak the gelatin in very cold water and let it swell. Once swollen, drain it, squeeze it with your hands, and melt it in the microwave along with a little of the chestnut cream. Be careful not to let the gelatin boil while heating.

Lightly whip the remaining cream. First, mix the melted gelatin into the chestnut cream, then gently fold in the whipped cream. Incorporate the cream with delicate and light movements.

Prepare the glasses in which you will serve the dessert. First, pour a little orange juice into the glasses. Then, pipe the chestnut mousse over the juice and decorate it with whole chestnuts, hazelnuts, and grated chocolate.

Advice
The chestnut cream can also be prepared using an electric blender. If you dont have a microwave, dissolve the gelatin in a cup over low heat.
