Ingredients
Caramelized apples

30 g Butter, unsalted

2 piece Apple, fresh

2 spoons Juice, lemon

50 g Sugar, brown

1 handful Walnuts

360 ml Coconut milk

370 g Juice, apple

1.5 teaspoons Spices, cinnamon, ground

In a blender container, add plant-based milk, apple puree, ground cinnamon, vanilla extract, and maple syrup (for a non-vegan version, you can use honey or another sweetener of your choice). Mix the ingredients smoothly. Taste the mixture and season further if needed.

Mix chia seeds into the prepared mixture. Let it sit for 5-10 minutes so the seeds start to gel, then mix the pudding well again and distribute it into glasses. Store the glasses in the refrigerator for at least 2 hours, preferably overnight.

Just before serving the chia pudding, prepare the caramelized apples. Wash, peel, and cut the apples into pieces.

In a saucepan, melt butter or coconut oil. Add the apples, lemon juice, and sugar, and cook the apples over moderate heat, stirring occasionally, until they caramelize and soften slightly. Just before the apples are ready, add the chopped walnuts to the saucepan and toast them together with the apples.

Spoon the caramelized apples and walnuts onto the chia pudding. This dish can be enjoyed as breakfast or as a dessert.
