Chia Pudding with Raspberries

Ingredients

100 ml Yogurt, plain, from skimmed milk

400 ml Coconut milk

pieces Honey

100 g Flaxseed

250 g Raspberries

In a bowl, mix together almond milk, yogurt, and honey. Stir in chia seeds and refrigerate the bowl for 30 minutes to allow the mixture to start thickening.

Place the raspberries in a container (reserve about a handful for decoration) and mash them into a puree with a fork.

Add a tablespoon or two of the raspberry puree to the bottom of the glasses, then fill them almost to the top with the chia seed, yogurt, and almond milk mixture. Refrigerate the glasses overnight to allow the seeds to gel and form a thick pudding.

Before serving, decorate the prepared pudding with the reserved raspberries.
