375 g Mayonnaise

70 g Green, raw

40 g Walnuts

125 g Butter, unsalted

450 g Bread, whole grain

155 g Arugula

2 piece Tomato, red

Preheat the oven to 210 °C. Grease a baking dish with four tablespoons of oil and place the chicken fillets in it. Brush the fillets with the remaining oil, cover with foil, and bake in the preheated oven for 12 minutes. Remove the dish from the oven and let the meat cool.

Slice the roasted chicken into strips. Wash the greens and chop them finely. Wash the tomatoes and slice them. Mix the greens and walnuts into the mayonnaise, season with salt and pepper.

Clean, wash, and drain the arugula. Slice the bread and spread butter on the slices. Arrange the chicken on half of the bread slices. Spoon the mayonnaise mixture over the chicken, then add the tomato slices and finally the arugula. Cover with the remaining bread slices. Press the sandwiches, wrap them in foil, and refrigerate for one hour before serving.
