Chicken and Cheese Quesadilla
Next time you crave Mexican food and are short on time, remember this recipe. Chicken, cheese, and pepper quesadillas are ready in just 30 minutes. Serve them with a large bowl of salad or simply with various sauces for dipping.

450 g Meat, chicken, breasts

1 piece Bell pepper, red, fresh

150 g Cheese, edamame

8 pieces Tortilla, wheat
Steps

Rinse the chicken fillet under running water and dry it well with paper towels. Cut it into thick slices and season with salt and pepper (optionally add a bit of smoked or hot paprika, chili powder, etc.).

Heat oil in a pan and fry the seasoned chicken strips on both sides until golden brown. Remove the cooked meat from the pan and cut it into smaller pieces. Keep it warm on a covered plate.

Wash the pepper, clean it, and cut it into pieces. Peel the onion and cut it into pieces roughly the same size as the pepper. Pour out excess oil from the pan used for cooking the meat, leaving about one tablespoon of oil. Add the chopped vegetables to the pan and sauté them for 4 to 5 minutes, stirring occasionally, until they soften slightly but remain firm.

Add the sautéed vegetables to the chicken. Wash or wipe the pan with a paper towel and place it back on the stove. Lightly sprinkle it with water, then place a tortilla in the pan. Top it with the chicken and vegetable mixture. Sprinkle some grated cheese over the filling, then place another tortilla on top. Once the quesadilla is golden brown on the bottom, flip it using a spatula and cook the other side until golden.

Serve the prepared quesadilla on a plate, cut into quarters, and serve with salad, various sauces, and sides. Repeat the process to prepare the remaining three quesadillas.
