Chicken and Mint Salad

Ingredients

500 g Meat, chicken, breasts

2 handfuls Mint

1 piece Sweet potato, unpeeled, fresh

8 pieces Tomato, red

1 piece Onion, raw

4 spoon Juice, lemon

2 pinch Spices, pepper, black

3 pinch Salt, table

3 spoons Oil, olive
Steps

Rinse the chicken breasts under running water and dry them with a paper towel. Season them on both sides. Wash and dry the vegetables.

Place a larger pan on the stove and heat it well. Pour oil into the pan and place the chicken breasts in it. Cook the breasts on both sides until a crispy crust forms. You can cover the pan while cooking; cook on moderate heat and salt the breasts only towards the end. Transfer the cooked breasts to a plate.

Peel the onion and slice it into rings. Slice the cucumber into rings as well, while simply halve the tomatoes. Slice the chicken breasts into thin pieces.

Arrange the vegetables on plates and sprinkle with mint leaves. Place the chicken slices on top of the vegetables. Season the salad to taste and drizzle with lemon juice.
