Chicken and Vegetable Stew

Ingredients

1 kg Meat, chicken, breasts

4 spoon Oil, olive

1.5 l Water

4 pieces Onion, raw

2 piece Bell pepper, yellow, fresh

3 pieces Tomato, red

1.5 spoons Spices, paprika

1.5 spoons Tomato, concentrate

2 spoons Parsley, fresh

1 dl Alcohol, Wine, White
Steps

Rinse the meat under running water, dry it with a paper towel, and cut it into larger cubes (about 3 centimeters). Peel the onion and cut it into quarters, wash the vegetables, clean them, and cut them into larger pieces.

In a larger pot, quickly fry the meat in olive oil. While stirring, fry it until it is seared on all sides. Add the onion, ground red paprika, and tomato paste, quickly fry everything together, and pour in water. Season the water with salt and pepper to taste and cook on moderate heat for 20 minutes. Add the chopped vegetables and half of the chopped parsley to the pot, stir, and cook for another 10 minutes.

Then pour white wine into the pot and cook for another 10 minutes until the wine evaporates and the liquid thickens slightly. At the end of cooking, sprinkle fresh parsley over the stew and remove it from the heat. Serve the warm stew with a slice of homemade bread.

The stew can also be prepared with chicken breast.Thyme and rosemary pair excellently with the stew.For thickening, you can use sour cream, or you can fry a tablespoon of flour in oil.
