Chicken Breast with Fresh Herbs and Vegetables

Steps

Halve the chicken breasts, wash them, and dry them with a paper towel. Place a pan on the heat and add a drop of olive oil. Wait for the oil to heat up, then add the chicken breasts.

Cook the breasts over moderate heat. First on one side (between 5 and 10 minutes), then on the other side (5 to 10 minutes). Be careful not to cook the breasts too quickly and reduce the heat if necessary. Once they are golden brown on both sides, season with salt and pepper, and remove from the heat.

Peel the garlic and place it in the multipurpose chopper along with parsley, basil, and red bell pepper. Add a drop of high-quality olive oil and chop the mixture well. When the pieces of vegetables and herbs are very fine, take a spoon and scoop up the mixture. Rub the mixture of herbs and vegetables onto the roasted chicken breasts, being careful not to burn yourself.

Serve the breasts on plates or a platter and decorate as desired. In the autumn season, you can garnish the plate with grape berries.

Advice
Herbs and vegetables can also be chopped by hand, but they wont be as finely chopped as with a multipurpose chopper. Coarsely chopped herbs and vegetables are also tasty, but they can only be sprinkled on the meat rather than rubbed in. The juice left on the board after chopping can be soaked up with a piece of bread to absorb all the goodness. Serve the bread with the roasted breasts.
