Chicken Breasts in Creamy Tomato Sauce
An excellent dish, prepared in just over half an hour and in one pan. If desired, you can also add drained capers or sliced olives to the sauce.

Ingredients

4 pieces Meat, chicken, breasts

2 teaspoons Spices, basil, dried

1 piece Onion, raw

120 ml Soup base, chicken, cube

400 g Tomato, pieces - can

2 spoons Tomato, concentrate

80 ml Sweet cream

1 teaspoon Spices, oregano, dried

Steps

Season the chicken breasts on both sides with salt, ground pepper, and half of the dried basil. Peel the onion and garlic, and finely chop them separately.

Heat olive oil in a pan. Add the seasoned pieces of meat and cook them over medium heat for 3-4 minutes on each side, until they are lightly golden brown. Remove the cooked meat from the pan and set it aside on a plate.

In the same pan where the meat was cooked, add butter and wait for it to melt. Add the onion and sauté until translucent. Stir in the chopped garlic and quickly sauté it together with the onion.

Pour the broth or wine into the pan. Use a spatula to scrape the bottom well, loosening all the caramelized bits that formed during the cooking of the meat. Cook over medium heat for about 4 minutes, allowing some of the liquid to reduce or the alcohol to evaporate.

First, stir the tomato paste into the sauce, then add the canned tomatoes and cream. Season with oregano and the remaining basil, and if necessary, add a bit more salt and pepper. Return the cooked meat to the sauce along with any juices that have been released.

Bring the sauce to a boil, then cover the pan and let the dish simmer over moderate heat for about 8 minutes.

Sprinkle the prepared dish with freshly chopped parsley if desired. Serve hot, with a side of mashed potatoes, roasted potatoes, croquettes, gnocchi, or rice.

Advice
Instead of cream, you can also use mascarpone.
