Chicken Breasts in Tomato Sauce

4 spoon Cheese, creamy

1 handful Basil, fresh

6 pieces Meat, chicken, breasts

0.75 teaspoons Salt, table

Preheat the oven to 190 degrees Celsius. Peel and finely chop the onion and garlic. Rinse the chicken breasts under running water and thoroughly dry them with kitchen towels. Lightly season them with salt and pepper.

Heat three tablespoons of olive oil in a pan, and sauté the onion over medium heat until it softens. Add the garlic and cook for another 1 to 2 minutes. Stir in the canned cherry tomatoes and simmer the sauce over moderate heat for 5 to 10 minutes. Season with salt and pepper to taste.

Rinse the basil leaves under running water, shake them dry, and roughly chop them. Remove the pan from the heat and stir in the mascarpone and half of the basil into the sauce.

Heat olive oil in a new pan and brown the chicken breasts on both sides until golden. Transfer the browned chicken breasts to a baking dish and pour the sauce over them. Place the baking dish in the preheated oven for 25 to 30 minutes.

Remove the prepared dish from the oven, sprinkle with the remaining basil, and serve. Offer it alongside your chosen side dish.
