Peel the onion and garlic, then finely chop them separately. Pit the olives and cut them into smaller pieces, rinse the basil leaves under running water, and shake them dry. Wash the chicken breast halves and pat them dry with paper towels. Season them with pepper, salt, and Italian seasoning.

Heat olive oil in a large pan with a heat-resistant handle, and sear the seasoned chicken breasts over medium heat. Turn them while cooking to ensure they brown evenly on all sides.

Remove the seared chicken pieces from the pan and keep them warm on a plate. Add the onion to the pan and caramelize it, stirring occasionally (add a bit more oil if needed). Then add the garlic and sauté it with the onion for 1 minute—just enough to release its aroma. Pour in the tomato puree and add the olives and canned cherry tomatoes. Season with pepper and salt to taste. Use a spatula to scrape the bottom of the pan to release all the caramelized bits from cooking the meat. Simmer the sauce over medium heat for 5 minutes to thicken slightly.

After 5 minutes of simmering, return the seared chicken pieces to the pan. Add the basil leaves and cover the pan. Cook over medium heat for another 15 minutes, turning the chicken breasts once during this time.

Preheat the oven to 200°C (392°F). Uncover the pan and top the chicken breasts with slices of mozzarella. Bake the dish in the preheated oven for 5 to 7 minutes, until the cheese is melted and golden brown. Serve with bread or your chosen side dish.
