Steps

Thoroughly wash the tomatoes and cut out the green parts with a knife. Slice them into eighths and place them in a separate bowl. Peel one onion, slice it into thin pieces, and mix it with the salad. Season the prepared salad to taste with olive oil, salt, and pepper. Store it in the refrigerator for a while. Thoroughly wash the parsley, shake it dry, and finely chop it.

Wash the chicken breasts and dry them with paper towels. Cut them into two parts. Then slice each part to create two thinner cutlets. Clean the mushrooms, quickly wash them, and slice them into thin pieces. Peel the other onion and finely chop it. Place a larger pan on the stove, heat it up, and then add oil. Place the chicken cutlets in the heated oil and cook them on each side until they turn golden brown. Remove the cooked cutlets to a plate, and in the same pan, add the onion and sauté it until it becomes translucent.

Add the mushrooms and sauté them while stirring. Return the cutlets to the pan, pour in the wine, and bring the liquid to a boil. Once the liquid boils, add the broth and season everything to taste with pepper and salt. Cover the pan and simmer on low heat for about 30 minutes.

Serve the prepared dish on plates, sprinkle with parsley, and serve the chilled salad on the side.
