Chicken Breasts with Mushrooms and Crispy Parmesan Crumbs
The base of the dish consists of chicken breast halves, which are topped with sautéed mushrooms and onions before baking. To make the dish even more delicious and refined, a topping of Parmesan crumbs is added, sprinkled over the mushrooms, and then everything is baked in the oven.

Wash the chicken breast halves and thoroughly dry them with paper towels. Lightly season them with pepper and salt. Clean the mushrooms with a damp cloth and slice them (smaller mushrooms can be left whole or halved). Peel the onion and slice it.

Heat oil in a pan and quickly sear the seasoned chicken breast halves on both sides. Remove the seared chicken from the pan and keep it warm on a plate. Add a knob of butter to the pan and wait for it to melt. Add the onion and sauté it, stirring occasionally, until it becomes translucent and softens slightly. Then add the mushrooms and quickly sauté them together with the onion. Remove the pan from the heat and season the mushrooms with pepper and salt.

Preheat the oven to 200 degrees Celsius. Line a deep baking dish with parchment paper. Rinse the parsley sprigs under running water, shake them well, and finely chop them. In a bowl, mix the breadcrumbs, Parmesan, and parsley.

Arrange the seared chicken breast halves in the baking dish. Top them with the sautéed mushrooms, then sprinkle the breadcrumb, Parmesan, and parsley mixture over the mushrooms. Place one or two small knobs of butter on each piece of chicken. Bake the dish in the preheated oven for 15 to 20 minutes, until the chicken is nicely cooked and the Parmesan crumbs are golden brown.

Advice
You can mix one or two tablespoons of sour cream or mascarpone into the sautéed mushrooms. The dish can be prepared with just one type of mushroom (e.g., button mushrooms, chanterelles, or porcini), but it is definitely much tastier if you use a variety of mushrooms.
