Chicken Breasts with Parmesan Herb Crust

1 spoon Oil, vegetable oil, canola

600 g Meat, chicken, breasts

0.25 teaspoons Salt, table

2 pinch Spices, pepper, black

60 g Breadcrumbs, dried

40 g Cheese, Parmesan, grated

2 spoons Basil, fresh

1 teaspoon Lemon zest, fresh

30 g Butter, unsalted

16 pieces Tomato, red
Steps

Rinse the chicken breast pieces under running water and dry them with paper towels. Cut each piece in half lengthwise to create two smaller pieces. Lightly season all the chicken pieces with pepper and salt. Rinse the cherry tomatoes under running water.

Preheat the oven to 200 degrees Celsius. Grease a baking dish with oil. Arrange the chicken pieces in the greased baking dish (the dish should be large enough so the pieces do not overlap). In a bowl, mix the grated Parmesan, breadcrumbs, chopped herbs, and lemon zest. Spoon the mixture onto the chicken pieces. Then place one or two small pieces of butter on top of each chicken piece. Arrange the cherry tomatoes around the chicken in the baking dish. Place the dish in the preheated oven for 20 to 30 minutes.

Serve the baked chicken pieces on plates, garnished with the roasted tomatoes, and pair with your chosen side dish.
