Chicken Curry with Lentils
Curry is a spice blend commonly used especially in Indian and Asian cuisine. It is composed of at least 12 ingredients, and in some parts of India, they mix up to 36 ingredients. The basic ingredients include cayenne pepper, black pepper, cloves, cumin, coriander, ginger, turmeric, nutmeg, mace, mustard, and allspice.

Steps

Rinse the lentils under cold running water and drain well. Place them in a large pot with a thick bottom. Add curry powder, ground coriander, cumin, and broth base. Mix everything together, place the pot on the stove, and bring the contents to a boil.

Reduce the heat, cover the pot, and simmer the contents slowly for 10 minutes. Clean the celery and carrots, rinse them, and cut them into pieces of any desired size. Rinse the meat well and pat it dry. Add the meat, celery, and carrots to the pot with the lentils. Cover again and cook for another 40 minutes or until the meat is fully cooked.

Stir in the chopped coriander, season with salt and pepper. Divide the curry onto plates, garnish with coriander sprigs, and serve with rice.
