Chicken Curry with Sweet Potatoes
Sweet potatoes are a very healthy food that is becoming increasingly popular here as well. We can add them to soups and stews, cut them into sticks and fry them, or use them to make a delicious puree. They are also an excellent addition to spicy dishes, as their natural sweetness provides a great counterbalance to spicy seasoning blends.

Ingredients

1.5 spoons Oil, vegetable oil, canola

1 spoon Spices, curry powder

700 g Meat, chicken, breasts

2 piece Sweet potato

4 spoon Lentils, raw

300 ml Soup base, chicken, cube

400 ml Coconut milk

Steps

Wash the chicken breasts and dry them with paper towels. Cut them into bite-sized pieces. Peel and wash the sweet potatoes. Cut them into pieces of any size.

Heat oil in a large pot (or wok). Add the curry paste and fry it for 1 minute while stirring constantly to release all the aromas.

Add the chicken, sweet potatoes, and lentils to the pot. Mix well so that the curry paste is evenly distributed, then pour in the chicken stock and coconut milk. Bring to a boil, then reduce the heat and let the dish simmer for 15 to 20 minutes, or until the sweet potatoes and lentils are completely tender.

Taste the prepared dish and season with salt if desired. Serve it in bowls and accompany with simple unleavened bread.

Advice
You can enrich the curry before serving by adding thick yogurt. Sweet potatoes are not related to regular potatoes, although both originate from Central America. The red sweet potato with sweet orange flesh is good for roasting, purees, soufflés, and stuffings. The white sweet potato is finer and has a drier white flesh. It can be fried, boiled, or used in mixed meat and vegetable dishes. Instead of sweet potatoes, you can use regular potatoes.
