Chicken Cutlets in Mushroom Sauce

Ingredients

1.5 spoons Oil, olive

2 spoons Butter, unsalted

500 g Meat, chicken, breasts

2 piece Shallot

450 g Mushrooms, mushrooms, fresh

2 pod Garlic, fresh

250 ml Sweet cream

200 ml Soup base, chicken, cube

Clean the mushrooms and, if necessary, quickly rinse them under running water to remove any soil residue. Dry them with paper towels, then slice them. Peel the shallot and garlic, and finely chop them separately.

Season the chicken cutlets on both sides with salt and ground pepper. Place a pan on the stove and heat a tablespoon of oil and a tablespoon of butter. Add the chicken cutlets and sear them until golden brown on both sides (2 to 3 minutes per side). Remove the seared cutlets from the pan and keep them warm on a plate.

In the same pan used for the cutlets, add another tablespoon of butter and half a tablespoon of oil. Sauté the shallot in the heated fat until golden. Add the sliced mushrooms and cook them for about 10 minutes, stirring occasionally, until they soften, darken in color, and all the liquid in the pan evaporates. Add the garlic and sauté with the mushrooms for 1 minute to release its aroma.

Pour the cream and chicken broth into the pan. Use a spatula to scrape the bottom of the pan, loosening any caramelized bits that formed during cooking.

Return the seared cutlets to the sauce along with any juices that have accumulated while they rested. Let the dish simmer over medium heat for 10 minutes. Season the sauce to taste with salt and ground pepper, and optionally add a bit more minced garlic and/or thyme.

Serve the chicken cutlets in the sauce on plates. Pair with croquettes, mashed potatoes, bread, cooked rice, or any other side dish of your choice.
