Chicken Cutlets in Parmesan Sauce with Polenta Side

Polenta

Cut the chicken breasts into cutlets, season them with salt, pepper, and optionally add some paprika.

Heat oil in a pan and quickly sear the cutlets until golden brown, then transfer them to a plate. It's important that the cutlets are well-seared so that a brown layer remains at the bottom of the pan, which will add flavor to the sauce.

Pour sweet cream into the pan and add grated Parmesan. Stir and return the seared cutlets to the sauce along with any juices that have been released while they rested.

Cook the cutlets in the sauce for another 5 minutes to allow the flavors to meld and the sauce to thicken slightly. Remove from heat.

While preparing the cutlets, cook the polenta. Bring a liter of water to a boil in a pot, adding butter and salt. Gradually pour in the polenta while continuously stirring. Add chopped basil and cook for a few minutes over moderate heat until the polenta thickens.

Grease a small rectangular baking dish with oil, then pour in the cooked polenta and spread it evenly across the surface, smoothing the top. Let it cool.

Once cooled, remove the polenta from the dish and cut it into desired pieces.

Arrange the neatly cut polenta on a plate. Serve with one or two cutlets, drizzled with the creamy sauce. Garnish with basil leaves and fresh tomatoes, then serve the prepared dish.
