In a large bowl, mix together raisins, olives, capers, olive oil, lemon juice, ground cinnamon, and thyme. Rinse the chicken drumsticks under running water and dry them well with paper towels. Add them to the bowl with the marinade and mix everything well with your hands so that the marinade coats all pieces of meat. Cover the bowl and let the chicken marinate for at least one hour.

Preheat the oven to 200 degrees Celsius. Remove the chicken pieces from the marinade and dry them well. Heat olive oil in a pan. Season the chicken drumsticks with salt and quickly sear them in the hot oil. Turn them while cooking to ensure they are evenly browned on all sides. If you don’t have a large enough pan, cook the drumsticks in two or three batches.

Place the seared drumsticks in a baking dish and put it in the preheated oven for about 10 minutes. After 10 minutes, remove the dish from the oven, add the marinade, and pour sweet sherry over everything. Return the dish to the oven for another 15 to 20 minutes.

Once the drumsticks are cooked, remove the dish from the oven. Sprinkle toasted almonds over the dish. Serve the prepared dish with your chosen side.
