Chicken Drumsticks with Tomatoes, Olives, and Mushrooms

Ingredients

1.5 spoons Oil, olive

300 g Mushrooms, mushrooms, fresh

8 pieces Meat, chicken, loaves

500 g Tomato, pieces - can

1 piece Soup base, chicken, cube

80 g Olives, black, in brine

2 pinch Spices, pepper, black

0.25 bouquet Parsley, fresh
Steps

Wash the chicken drumsticks and thoroughly dry them with paper towels. Clean the mushrooms with a damp cloth (if necessary, quickly rinse them under running water). Cut them into quarters. Peel the garlic and finely chop it. Strip the leaves from the thyme and rosemary sprigs and finely chop them.

Heat oil in a large pot with a thick bottom. Add the mushrooms and sauté them while stirring until all the water they release during cooking evaporates. Then add the chicken drumsticks to the pot. Continue cooking the ingredients in the pot until the drumsticks are lightly browned on all sides.

Then add the garlic and herbs to the pot and pour in the pureed tomatoes. Add the crumbled chicken bouillon cube, mix everything well, and cover the pot. Cook over moderate heat for about 40 minutes or until the chicken meat becomes tender.

Cut the olives into small pieces. Add them to the pot about 10 minutes before the end of cooking. Season the dish with pepper to taste.

Coarsely chop the parsley. Serve the prepared dish on plates, sprinkle with parsley, and serve with a side of your choice.
