Chicken Enchilada
Chicken rolled in a creamy yogurt filling and topped with tomato sauce – surprisingly simple to prepare.

Ingredients

250 g Meat, chicken, breasts

1 piece Onion, raw

2 pod Garlic, fresh

3 pieces Chili peppers, green chili, fresh

4 pieces Tomato, red

1 spoon Coriander, leaves, fresh

300 ml Yogurt, plain, from whole milk

130 g Cheese, edamame

0.75 teaspoons Salt, table

2 spoons Wheat germ oil

8 pieces Tortilla, corn

Steps

Peel and finely chop the onion and garlic. Wash the chilies, remove the seeds, and slice them into rings. Dip the tomatoes in boiling water for three minutes, remove the skin, and dice them. Grate the cheese, while washing and drying the chicken with a paper towel.

Bring water to a boil in a pot. Cook the chicken fillets in the boiling water for 10 minutes. Once cooked, place them on a plate and let them cool slightly. Cut the cooled fillets into smaller pieces and place them in a bowl. Add the grated cheese and yogurt to the bowl, then mix everything well. Season with salt to taste.

Heat oil in a pan and sauté the onion and garlic while stirring. Add the chili, tomato, coriander, and salt. Stir and let it cook until the sauce thickens. Once the sauce thickens, remove the pan from the heat.

Preheat the oven to 180 degrees Celsius. Place a new pan with oil on the stove. Alternately place the tortillas in the pan and toast them on both sides (they should soften). Fill the softened tortillas with the yogurt mixture, then roll them up.

Grease a baking dish well with oil and place the rolls in it. Pour the tomato sauce over them, cover the dish with aluminum foil, and bake in the preheated oven for 20 minutes.
