Chicken Enchiladas
What to prepare to feed the whole family with a delicious meal, and with as little work and dirty dishes as possible? An excellent choice is chicken enchiladas, for which you will need only six basic ingredients and a good half hour for preparation. Mmm, yum.

Ingredients

500 g Meat, chicken, breasts

2 teaspoons Spices, basil, dried

600 g Tomato sauce, without salt

100 g Cheese, mozzarella

2 piece Onion, raw

2 spoons Corn, yellow, in brine

6 pieces Tortilla, corn

Steps

Dry the chicken well and rub it with a mixture of spices for roasted chicken (you can also use salt, pepper, paprika, garlic, and other spices to taste).

Slice the onion into thin pieces and sauté them in a larger pan with a tablespoon of oil. Once it is sautéed and softened, remove it from the pan, and add the chicken, which you will brown on all sides, about 5–10 minutes. When the chicken is cooked, return the onion to the pan and add 2–3 tablespoons of Mexican salsa and a little water. Mix well, then cook on medium heat for another 5 minutes, allowing the sauce to thicken and the flavors to blend.

Turn off the heat, shred the chicken with a fork (or cut it into smaller pieces) and return it to the sauce. Add the corn and mix everything well.

Preheat the oven to 200 °C. In a larger baking dish, add a couple of tablespoons of salsa and spread it over the bottom.

Take a tortilla, spread it with a tablespoon of salsa, and place the chicken filling on top. Sprinkle with grated cheese and roll the tortilla into a roll, placing it in the baking dish. Continue until all tortillas and filling are used.

Pour the remaining sauce over the tortillas in the baking dish and sprinkle grated cheese on top. Place the dish in the preheated oven and bake for about 10 minutes, until the cheese is melted and golden.
