Fajitas are a typical Mexican dish. Simply put, they consist of a filling of grilled and heavily seasoned pieces of meat and vegetables, which are used to fill wheat or corn tortillas.

Cut the chicken into strips. In a large bowl with a lid, mix 2 tablespoons of oil, lemon juice, and spices. Add the chicken and mix everything well. Cover the bowl and store it in the refrigerator, where it should rest for at least 1 hour.

Wash the vegetables. Peel the onion and shallots and cut them into larger pieces. Halve the bell peppers, remove the stems and seeds, and cut them into strips. Place a large pan on the stove and when it heats up, pour the remaining oil into it. Sauté the bell peppers and onion in the hot oil, then set aside and keep warm.

Drain the chicken. In the same pan used for the bell peppers, quickly sauté the chicken. Stirring occasionally, cook it for 5 to 6 minutes, then add the bell peppers and onion to the pan, mix well, and heat everything thoroughly.

Warm the tortillas in the oven or a dry pan and arrange them on plates. Fill them with the prepared meat and roll them up. Serve the chicken fajitas with various side dishes.
