Chicken Fillet in Cream Sauce with Spinach and Sun-Dried Tomatoes

60 ml Soup base, chicken, cube

50 ml Alcohol, Wine, White

250 ml Sweet cream

150 g Spinach, raw

Cut the chicken breast halves horizontally in half to get four pieces. Season both sides with salt, pepper, and garlic powder, then coat them in flour.

Wash the young spinach and dry it well. Cut the tomatoes into pieces.

Place a larger pan on the stove and heat a mixture of oil and butter. Sear the chicken pieces on both sides in the hot fat until golden brown (about 4 minutes on each side). Remove the cooked meat from the pan and keep it warm on a plate.

Pour the broth and wine (if using) into the pan where the chicken was cooked. Add mustard and use a spatula to scrape the bottom of the pan well to release all the caramelized bits that formed during cooking. Let the sauce simmer over medium heat for 1-2 minutes.

Pour the cream into the pan and add the spinach and sun-dried tomatoes. Wait for the spinach to wilt, then return the cooked chicken pieces to the sauce. Let everything cook together for about 5 minutes or until the chicken is cooked through. If needed, add a bit more water or broth, and season the sauce further if necessary.

Serve the dish immediately. For side dishes, you can offer rice, polenta, mashed potatoes, pasta, or gnocchi.
