Chicken Fillet with Goat Cheese, Spinach, and Pancetta
A great idea for a quick lunch or dinner that impresses with its appearance and taste. Before baking, make several cuts in the chicken fillets and fill them with a mixture of spinach and goat cheese (you can also use mascarpone), then top them with pieces of pancetta and mozzarella. Bake the prepared fillets in the oven and serve with a side of your choice. Quick and delicious!

Ingredients

800 g Meat, chicken, breasts

1 spoon Oil, olive

pieces Spinach, raw

pieces Cheese, creamy

pieces Lemon zest, fresh

7 slice Meat, pork, smoked bacon

125 g Cheese, mozzarella

Preheat the oven to 190 degrees Celsius. Clean, wash, and dry the spinach if necessary. Drain the mozzarella well, and slice the pancetta thinly if needed.

Heat oil in a pan and quickly sauté the spinach. Just enough to wilt and soften it. Lightly season with salt and pepper and let it cool slightly.

Season the chicken fillets with salt and pepper on both sides. Make several cuts in each fillet with a sharp knife. The cuts should be about 1.5 cm apart, and the fillets should still hold together at the bottom.

Squeeze the sautéed spinach well and chop it roughly. Mix it with the goat cheese. If desired, add a bit of grated lemon zest and adjust the seasoning with salt and pepper.

Place the cut fillets in a baking dish and fill each cut with the filling (use a spoon to help). Place a slice of mozzarella between the cuts and top with a piece of pancetta.

Bake the chicken fillets in the preheated oven for 25-30 minutes. Serve the baked fillets with a bowl of salad and/or your chosen side dish.
