Chicken Fillets with Cherry Tomatoes and Parmesan
This will be an excellent choice for moments when you want to eat something good but dont want to put in too much effort. The oven will do most of the work for you, and you wont have much to do with the preparation. You can serve it with creamy polenta, roasted potatoes, rice, couscous, quinoa, pasta, or gnocchi. For a lighter meal, a large bowl of salad will also pair well.

400 g Tomato, red

4 twig Thyme, fresh

800 g Meat, chicken, breasts

3 spoons Oil, olive

40 g Cheese, Parmesan, grated

Preheat the oven to 200 degrees Celsius. Wash and dry the cherry tomatoes, then cut them in half. Peel the garlic cloves and slice them.

Lightly grease a baking dish with oil, then add the cherry tomatoes, garlic, and thyme. Season with pepper and salt, and if desired, add a bit of ground chili or chili flakes. Gently mix the ingredients with clean hands and spread them evenly in the baking dish.

Season the chicken fillets with pepper and salt on both sides. Place them in the baking dish and drizzle everything with a bit of olive oil. Put the dish in the preheated oven for about 10 minutes to partially cook the chicken fillets.

Finely grate the Parmesan. After 10 minutes of baking, sprinkle it over the chicken fillets. Bake for another 10-12 minutes, or until the chicken is fully cooked, the tomatoes start to caramelize, and the Parmesan becomes crispy.

Sprinkle the prepared dish with chopped parsley or basil if desired. Add a few more Parmesan shavings and serve with your chosen side dish.
