Chicken Gizzard Goulash with Carrots and Peas
Chicken gizzard goulash is a very tasty, inexpensive, and hearty dish suitable for all seasons and any day of the week. You can also prepare it in advance and freeze it for later.

1 kg Meat, chicken, heart

2 piece Spices, bay (leaves)

Steps

Rinse the chicken gizzards (clean them if necessary). Cut them in half, then place them in a pot and cover with a generous amount of warm water. Add bay leaves and a few peppercorns. Simmer the gizzards gently for 30-40 minutes. Add salt while cooking.

Meanwhile, peel the onion and garlic, and chop them finely. Clean the carrots, wash them, and cut them into pieces.

Place another pot on the stove and pour in some oil. Add the onion and sauté it over low heat, stirring until it softens and turns lightly golden (about 10 minutes). Lightly salt the onion while sautéing.

Add the chopped garlic and drained gizzards to the pot with the sautéed onion (reserve the cooking liquid). Sauté everything together for about 3 minutes, then stir in tomato paste and ground paprika. Continue sautéing while stirring for another 2 minutes.

Pour the reserved cooking liquid from the gizzards into the pot. There should be enough liquid to fully cover the gizzards. Cover the pot and simmer the dish, stirring occasionally, for about 1 hour or until the gizzards are completely tender.

After about 15 minutes of cooking, add the chopped carrots to the pot. About 10 minutes before the end of cooking, add the frozen peas. Season with salt and, if needed, add more ground paprika and/or tomato paste. Add more liquid as needed. Once the peas are cooked, the dish is ready to serve.

Serve the goulash in deep plates or soup bowls. For an extra touch, you can add a spoonful of sour cream.
