Chicken Greek Skewers
Chicken meat is marinated in yogurt, lemon juice, and fresh Mediterranean herbs. This adds freshness and juiciness to the otherwise bland chicken meat, which it retains even during grilling.

Ingredients
-
700 g Meat, chicken, breasts
-
200 g Yogurt, plain, from whole milk
-
1 twig Spices, oregano, dried
-
2 twigs Parsley, fresh
-
2 pod Garlic, fresh
-
2 spoons Juice, lemon
-
0.75 teaspoons Salt, table
-
2 pinch Spices, pepper, black
-
2 spoons Oil, vegetable oil, canola
Steps
-
Peel the garlic cloves. Wash the parsley and oregano under running water and dry them. Remove the leaves from the stems and finely chop them together with the garlic. Wash the chicken breasts under running water and dry them with paper towels. Cut the meat into approximately 3-4 cm pieces. In a large bowl, mix the yogurt, lemon juice, chopped herbs, garlic, salt, and pepper. Add the meat pieces to the prepared marinade and mix well so that all the chicken pieces are well coated. Cover the bowl and marinate the meat in the refrigerator for about 1 hour.
-
Preheat the grill. Also, heat the grill grate well. Oil the metal skewers and thread the marinated meat pieces onto them. Brush the heated grill grate with oil.
-
Arrange the prepared skewers on the grill grate and grill them for about 12 minutes. Turn the skewers during grilling and baste them several times with the remaining marinade. The meat is done when it turns brown and becomes tender.
-
Serve the grilled skewers on plates and offer them with a chosen side dish and sauce.

Advice
If we skewer the chicken meat on wooden sticks, we must soak the wooden sticks in cold water for 30 minutes. It is best to use yogurt with 10% fat.
