Chicken Gyros
A globally popular Greek dish, this time prepared with marinated chicken thighs, tzatziki, quick salad, and homemade pita bread. For picnics, you can prepare everything in advance, grill the meat, and let your guests serve themselves.

Tzatziki

1 piece Sweet potato, unpeeled, fresh

150 g Yogurt, plain, from whole milk

Steps

Finely chop two cloves of garlic and place them in a resealable bag along with all the other marinade ingredients. Mix well, add the chicken pieces to the bag, and mix again. Seal the bag and refrigerate for at least two hours, or overnight. Grill the marinated chicken or cook it in a pan with oil over medium-high heat for 3 to 4 minutes on each side.

For the tzatziki, finely chop a clove of garlic. Peel the cucumber if desired, then halve it, remove the seeds, and coarsely grate it. Squeeze out the excess moisture from the grated cucumber and mix it with all the other tzatziki ingredients.

For the salad, dice the tomato and cucumber, and finely chop the onion. Mix the vegetables and season to taste.

For the pita bread, mix the flour, baking powder, and salt in a bowl. Make a well in the center and pour in the olive oil, maple syrup, and water. Mix the ingredients until combined, then transfer the dough to a surface and knead briefly until smooth. Cover with a cloth and let it rest for 10 minutes.

Divide the dough into four parts and roll each one out thinly. Heat two tablespoons of olive oil in a pan and cook the breads. Cook for one to two minutes on each side, then place the cooked breads on a tray and cover with a kitchen towel.

Assemble the gyros by spreading a bit of tzatziki in the center of each bread, topping it with the salad, and finishing with the meat, which you can slice or leave whole as desired.

Fold the filled breads like a pancake, wrapping the bottom in paper or securing it with a skewer.
