Chicken in Apricot Sauce

Ingredients

675 g Apricot, raw

0.25 cups Sugar, white

2 spoons Vinegar, apple

900 g Meat, chicken, breasts

1 pinch Salt, table

3 spoons Oil, olive

1 piece Onion, raw

4 dl Soup base, chicken, cube

1 spoon Rosemary, fresh

1 teaspoon Spices, cinnamon, ground

2 teaspoons Tabasco sauce

1 pinch Spices, pepper, black
Steps

Wash the apricots, halve them, and remove the pits. Cut them into small pieces and place them in a bowl. Add sugar and vinegar and mix well.

Wash the chicken, pat it dry, and cut it into bite-sized pieces. Peel and chop the onion. Heat 1 tablespoon of olive oil in a large pan over medium heat. Gradually brown the chicken pieces in the hot oil. While the chicken is cooking, season it with salt. Keep the cooked chicken pieces warm.

Pour the remaining oil into the same pan. Add the onion and sauté until translucent. Use a spatula to scrape the bottom of the pan, where small bits of chicken have stuck during cooking, and mix them with the onion.

Pour in the broth base and reduce the heat to medium-low.

Blend the apricots and the juice that has collected while waiting into a puree. Add the puree to the pan with the onion and broth base.

Add cinnamon, rosemary, Tabasco, and pepper. Taste and season with salt if needed. Increase the heat. Wait for the sauce to boil, then reduce the heat and let the sauce simmer gently for 10 to 20 minutes.

Add the cooked chicken pieces to the pan and cook for 5 minutes to heat the dish evenly. Serve with hot rice.

Advice
Instead of fresh apricots, you can use about a dozen dried apricots and less sweet apricot jam. Chop the apricots, mix them with the jam, and add the mixture to the broth base.
