Chicken in Creamy Parmesan and Spinach Sauce
A quick and easy dish, perfect for days when you dont have much time for cooking. Parmesan can be substituted with another hard cheese, such as sheep or goat cheese, but be more cautious with salt in that case. If you have some chives on hand, feel free to add them along with the spinach.

Ingredients

50 g Cheese, Parmesan, grated

1 spoon Koruzni škrob

1 piece Lemon, fresh, without shell

2 spoons Oil, olive

500 g Meat, chicken, breasts

1 spoon Butter, unsalted

2 pod Garlic, fresh

200 g Spinach, raw

200 g Sweet cream

1.5 dl Soup base, chicken, cube

Steps

If the chicken breasts are large, cut them in half. Mix half of the Parmesan with cornstarch, grated zest of half a lemon, salt, and pepper, then coat the chicken pieces in this mixture.

Heat olive oil in a pan and sear the chicken until golden brown. Cook for 3 minutes on each side, then transfer the meat to a plate.

Finely chop the garlic. In the same pan used for the chicken, add butter and sauté the chopped garlic for a minute. Add the spinach and cook for another minute, then pour in the cooking cream and broth base, and add the remaining Parmesan. Slice half a lemon into rounds, halve them, and add to the pan. Stir and season with salt and pepper if needed.

Return the chicken breasts to the pan and cook the dish for another 6 minutes. Garnish with chopped basil and serve with your favorite side, such as pasta, rice, or mashed potatoes.
