Chicken in Mustard-Herb Marinade

1 spoon Soy sauce, shoyu

1 teaspoon Spices, chili powder

1 twig Rosemary, fresh

1 teaspoon Spices, mayonnaise, dried

1.5 kg Meat, chicken, thighs

1 piece Spices, bay (leaves)

Thoroughly clean the chicken, wash it, and dry it well. Cut it in half and spread it open. Prepare the marinade by mixing all the marinade ingredients in a bowl. Then generously coat the chicken with the marinade and let it marinate for at least 30 minutes.

Preheat the oven to 220 °C. Heat a tablespoon of olive oil in a large pan and sear the chicken for five minutes, breast side down.

Place the chicken back-side down in a greased baking dish, and place a bay leaf and a sprig of rosemary on top. Bake the chicken in the oven for another 30 to 40 minutes until golden brown. Sprinkle with salt ten minutes before the end of baking for a crispier skin. Serve the roasted chicken with baked potatoes or a vegetable side dish.

Advice
Instead of all the herbs and spices, you can also use a mixture of Provencal herbs. For an even tastier chicken, prepare the marinade a day in advance so the chicken can absorb the herbs better.
