Chicken Korma
Chicken Korma is a mildly spicy and creamy Indian dish that originates from the Mughal Empire era. It contains a variety of spices, which, when combined with ground almonds and yogurt, transform into an exceptionally flavorful sauce in which chicken pieces are cooked. The dish is typically served at weddings and special occasions.

650 g Meat, chicken, breasts

250 ml Yogurt, plain, from whole milk

Steps

Rinse the chicken pieces under running water, dry them with paper towels, and cut them into bite-sized pieces. Peel the onion and garlic, and finely chop them separately. Peel and grate the ginger. Wash the chili, clean it (remove the stem and seeds), and finely chop it.

Heat butter and oil in a large pot. Add the chopped onion and sauté it over moderate heat for 2 minutes, stirring occasionally, until it becomes translucent and soft. Add the chili, ginger, garlic, coriander, garam masala, and turmeric. Quickly sauté the ingredients in the pot while continuously stirring, being careful not to burn the spices.

Add the ground almonds and tomato concentrate to the pot. Continue to sauté for another 2 minutes, stirring constantly, then add the chicken pieces and brown them on all sides. Pour in the yogurt, cover the pot, reduce the heat, and cook the dish on low heat for 12 to 15 minutes.

Season the prepared dish with salt to taste. Serve it on plates, garnish with coriander leaves, and accompany with cooked rice.

Advice
Instead of fresh chili, you can use 0.5 teaspoons of ground chili.
