Chicken Liver Pâté with Bacon

250 g Butter, unsalted

1 piece Onion, raw

1 pod Garlic, fresh

3 slices Meat, pork, smoked bacon

500 g Meat, chicken, liver

100 ml Alcohol, Wine, White

1 spoon Thyme, fresh

Steps

Peel the onion and garlic; finely chop the onion and slice the garlic. Remove any membranes from the chicken livers and cut them into smaller pieces. Cut the bacon into chunks.

In a pan, melt 60 g of butter, in which we sauté the onion and garlic for one minute while stirring. Add the bacon and livers, and continue to cook while stirring until the liver pieces are nicely browned on all sides. Add thyme and wine, season with salt and pepper to taste, and cook over moderate heat until almost all the liquid has evaporated. Remove from heat and let the mixture cool.

Transfer the cooled ingredients from the pan to a blender. Add the remaining butter and blend everything until smooth. Taste the mixture and adjust the seasoning with salt or pepper if desired. Pour the prepared pâté into a bowl, lightly press and smooth the top, cover with foil, and refrigerate until well chilled.

Serve the chilled pâté with slices of bread, crackers, or toasted bread.

Advice
Cleaned livers can be soaked in milk for a few hours to enhance their color and flavor. Instead of thyme, you can also use another herb (rosemary, mint, parsley, etc.).
