Chicken Liver Skewers

Ingredients

500 g Meat, chicken, liver

pieces Juice, lemon

2 spoons Oil, olive

1 spoon Soy sauce, shoyu

1 pinch Salt, table

2 pinch Spices, pepper, black

4 twig Coriander, leaves, fresh

Steps

Rinse the chicken livers under running water and dry them well with paper towels. Remove any membranes from the livers if necessary, then cut each piece into bite-sized chunks. Rinse the coriander and lemon balm sprigs under running water and shake them dry. Pluck the leaves from the sprigs and roughly chop them.

In a bowl, mix the lemon juice, olive oil, soy sauce, salt, and freshly ground pepper. Add the chicken liver pieces and stir well with a spoon to ensure all pieces are evenly seasoned.

Heat the grill well and lightly grease the grill grate. Thread the seasoned liver pieces onto wooden or metal skewers. Grill the skewers on the hot grill. Cook them for about 2 minutes on each side, or until the livers are browned on the outside but still pink inside.

Serve the grilled skewers on plates and sprinkle with the chopped fresh herbs. Serve them with yogurt or another sauce of your choice.

Advice
The skewers can also be baked in a regular or grill pan. Instead of coriander, use parsley, and if desired, replace lemon balm with mint.
