Ingredients
-
1 piece Meat, chicken, breasts
-
200 g Mushrooms, mushrooms, fresh
-
300 g Bread, whole grain
-
6 spoon Oil, olive
-
2 dl Water
-
1 spoon Tomato, concentrate
-
0.5 dl Alcohol, Wine, White
-
1 pinch Salt, table
-
1 pinch Spices, pepper, black
Steps
-
Wash the chicken breasts, cut them in half, and dry them with a paper towel. Wipe the mushrooms with a damp cloth, dry them with a paper towel, and slice them thinly. Then prepare a pan and add a drizzle of olive oil.
-
In the heated pan, sear the chicken breasts on both sides. When the breasts turn golden brown, add the mushrooms to the pan and quickly sauté them (2 minutes). Pour water, a tablespoon of tomato paste, and a bit of white wine into the pan. Mix everything together, season with salt and pepper. Reduce the heat and cook the meat in the sauce for 20 minutes.
-
Taste the sauce and add more salt if needed, or a bit of water if the sauce is too thick. Stir the sauce, then turn off the heat. Place a slice of bread on each plate, top with a piece of chicken breast, and then pour the sauce over the chicken. Serve with a glass of good white wine.

Advice
If we use red wine for the sauce, it is recommended to serve the dish with a glass of the same red wine. The sauce can be beautifully garnished with chopped fresh herbs - parsley, oregano, thyme … or you can place a sprig of herbs on the plate. Thyme pairs excellently with mushrooms.
