Place parchment paper on a medium-heated pan and sprinkle grated Parmesan on it in the size of small pancakes. Let the cheese melt and bind into a beautiful lace, which, while still hot, is draped over a small upside-down glass and wrapped in aluminum foil. Let the cheese cool.

Meanwhile, slice the chicken breasts into medallions, shape them into neat circles 8 cm in diameter, and fry them in a pan with heated fat. Once the medallions are cooked, remove the pan from the heat and stack the cooked meat in the following order: a cooked medallion, a drizzle of pear-vanilla vinaigrette, a slice of mozzarella, a medallion … Finish with a medallion, wrap the stack with prosciutto, and place the Parmesan "crown" on top. On the side, add sliced pear and young spinach, and finally, drizzle everything with the vinaigrette, which adds a refreshing contrast to the traditional flavors of prosciutto, mozzarella …
