Chicken Parmesan

0.5 cups Flour, Wheat, bread flour

0.75 cups Breadcrumbs, dried

450 g Meat, chicken, breasts

0.25 cups Oil, olive

300 g Pasta, Macaroni

1 teaspoon Salt, table

230 g Cheese, mozzarella

3 spoons Cheese, Parmesan, grated

3 twigs Parsley, fresh

4 pieces Tomato, red

1 piece Onion, raw

3 pods Garlic, fresh

2 spoons Oil, olive

3 dl Soup base, chicken, cube

1 teaspoon Spices, thyme, dried

Steps

Turn on the oven and preheat it to 200 °C. Prepare two large plates, one with flour and breadcrumbs, and the other with beaten eggs in a bowl. Coat the chicken pieces by first dredging them in flour, then dipping them in the eggs, and finally rolling them in the breadcrumbs.

Line a baking dish with parchment paper and place the chicken pieces on it. Drizzle them with oil and bake in the preheated oven for 10 to 12 minutes, then flip them and bake for another 8 minutes.

While the chicken is baking, place a pot with about a liter of salted water on the stove. Wait for the water to boil, then add the pasta and cook it for the time indicated on the package. Meanwhile, prepare the tomato sauce. Drain the cooked pasta and keep it warm.

Remove the baking dish from the oven and transfer the chicken to a plate. Place the pasta in the baking dish, arrange the chicken pieces on top, pour the tomato sauce over the chicken, and evenly sprinkle with shredded mozzarella and Parmesan. Return the dish to the oven and bake for another 14 to 16 minutes, until the cheese is golden brown. Wash, dry, and chop the parsley.

Serve the baked dish on plates, garnish with parsley, and accompany with a bowl of tomato or green salad.
